| Stuffed sardines |
|
Buy fresh sardines, making sure the gills are red and the eyes still bright . Wipe them with kitchen roll to remove the scales. Remove the head, gut and open to remove the backbone. Season the inside with salt.
Cook some fresh spinach with a little onion in some olive oil. Season with salt and pepper.
Once the spinach is cooked stuff the sardines close them and arrange them side by side in a flat dish, cover with breadcrumbs and sprinkle with olive oil.
Place in the oven. |
